Heinde & Verre - Bean to Bar from Rotterdam
This chocolate is produced by the small bean-to-bar chocolate maker Heinde & Verre in Rotterdam, Netherlands. "Hinde & Verre" translates to "Near and Far" and refers to the origin of the ingredients. Cocoa beans are sourced from afar, and beet sugar is produced locally in the Netherlands.
The chocolates here are traditionally "stone-ground" in melangers. A special feature at Heinde & Verre is the frequently used method of not uniformly roasting all cocoa beans for a chocolate, but working with different roasting profiles and then blending them into the chocolate.
All Heinde & Verre boxes contain two individually wrapped 35-gram bars. "One for now and one for later," as the two founders Ewald and Jan-Willem say. This way, the second half of the chocolate stays fresh for a long time.
