Heinde & Verre - Bean to Bar from Rotterdam

This chocolate is produced by the small bean-to-bar chocolate maker Heinde & Verre in Rotterdam, Netherlands. "Heinde & Verre" translates to "Near and Far" and stands for the origin of the ingredients. The cocoa beans are sourced from afar, while the beet sugar is produced locally in the Netherlands.

The chocolates are traditionally "stone-ground" in melangeurs. A special feature of Heinde & Verre is the frequently used method of not roasting all cocoa beans for a chocolate uniformly, but rather working with different roasting profiles and then blending them in the chocolate.

All Heinde & Verre boxes contain two individually wrapped bars of 35 grams each. "One for now and one for later," as the two founders Ewald and Jan-Willem say. This keeps the second half of the chocolate fresh for a long time.
