Honeycomb is an airy, crunchy foam caramel that forms when sugar and syrup are heated and then frothed with sodium bicarbonate (baking soda). As it cools, the typical honeycomb-like structure forms, reminiscent of a beehive – hence the name.

The taste is:

• intensely caramelly
• warm and slightly roasted
• crispy-airy
• brittle rather than sticky
• reminiscent of Crunchie bars or crispy caramel
