preparation
Dough preparation
First, we beat the eggs, egg yolks, and powdered sugar until fluffy. Then we sift the flour and carefully fold it into the egg mixture. Spread three large tablespoons of this batter onto a piece of baking paper in a tart pan and bake at 240°C for about 15 minutes until golden brown.
We add the cocoa to the remaining dough and bake three more cake layers as before.
Tip: Remove the cake bases from the pan immediately after baking!
Preparation of chocolate truffles
We chop the Dammenberg chocolate into pieces and melt it in a water bath. Then we fold in the whipped cream.
The result looks something like this:

Preparation of the actual cake
The raspberries are pureed together with the sugar using a blender.
Now we will layer the four layers in a springform pan.
First layer: We start with one of the three chocolate bases. We spread a thin layer of raspberry puree evenly over the chocolate base in the springform pan. Then, we add a 2 cm layer of chocolate truffles.
Second layer: Cover the resulting cake with the light base. Repeat the two layers of raspberry puree and chocolate truffle.
Third layer: We cover the previous layer with a chocolate base and repeat the layering of raspberry puree and chocolate truffle a third time. On top of this, we place the final chocolate base and press it down lightly.
decoration
The entire cake should now be spread with chocolate truffles and then covered with chocolate shavings.
If you like, you can sprinkle some powdered sugar over it for a colorful accent.
